Fresh Catch Recipe: Florida Red Snapper Filet with Brown Butter Lemon Sauce

Follow along as Okeechobee Prime Seafood owner, Ralph Lewis, cooks our Fresh, Florida Red Snapper Filet with Brown Butter Lemon Sauce. A lightly dredged sauteed snapper filet that pairs beautifully with fresh, aromatic vergetables, and dressed with a beautifully light and tasty lemon butter sauce. We cook almost exclusively fresh, locally sourced fish in our new fish house. Sourcing as much as possible as we can out of South Florida's world-famous fishery. And we highly encourage you to try this recipe at home with fresh-caught fish off your boat or fresh from a Florida fisherman!

  • Red Snapper Filets, 4 8 oz.
  • Olive Oil, 2 tablespoons
  • Flour, 4 oz.
  • Salt and Pepper, 3 oz.
  • Chicken Stock, 8 oz.
  • White Wine, 8 oz.
  • Lemon juice, 2 tablespoons
  • Butter, 4 oz.
  • Chopped Parsley, 2 tablespoons
  1. Coat the skin side of the snapper filets with flour and salt n pepper
  2. In a large sauté pan over medium-high heat add oil
  3. Once the oil is hot lay the snapper filets skin side down first (carefully not to have oil splash on you)
  4. Move the fish around to ensure you’re getting a nice sear and it’s not sticking to the pan
  5. After 3-4 minutes and the skin is crispy flip the snapper filets over and add white wine to the pan
  6. Then add the lemon juice to the
  7. Reduce until almost dry then add the chicken stock and bring to a simmer
  8. Remove from heat and add butter sauté the butter until fully incorporated
  9. Add chopped parsley
  10. Place snapper filets on a plate with 2 oz. of sauce for each fish
